German-Pancakes-To-Go
I make these pancakes the night before so everyone could grab-and-go in the morning. Putting them in muffin pans makes it even faster. This recipe is also dairy-free! Feel free to use regular milk instead.
1 cup flour
1 cup soy milk
6 eggs
1t. salt
Preheat the oven to 425 degrees and spray the muffin pan liberally with butter-flavored spray. In a bowl mix the rest of the ingredients together. Don't worry about the little bumps. Pour into the muffin pan evenly in each holder. Place in oven for 20 minutes. Do not open the oven early or pancakes will fall. Serve alone, with syrup, powdered sugar, or even some fresh fruit on top.

What a great idea. I never thought of that. Do you cook them as long, 20 min or does it take shorter time?
ReplyDeleteNo, it still takes 20 minutes. I've even cut it in half in a 9'x9' pan and it still takes 20 minutes.
