Oreo Truffle Balls
We tried some Oreo balls at a baby blessing and liked them so we found a recipe online at whatscookingamerica.net My husband modified it a bit and this is what he came up with:

Mint Oreo Truffles
1 package (1 pound 2 oz) Mint Oreo Cookies
1 package (8 oz) Cream Cheese
2 bags (8 oz) Semi-Sweet Chocolate Chips
Toppings Health Bar bits (optional)
Line 2 large baking sheets with wax paper, set aside.
In a blender crush a few Oreos at a time into crumbs, not powder. You'll want them slightly chunky. Or you could put them in plastic bags and use a rolling pin.
Mix the cream cheese and the Oreos together in a bowl until it's creamy.
Using your hands, roll into walnut size balls. Place the balls onto the wax paper and into the freezer for up to a week but at least 45 minutes.
Crush the Heath Bars into the desired texture.
Right before you take them out of the freezer melt the chocolate in the microwave. In a microwave-safe bowl, melt the chocolate using the defrost setting. Microwave for one minute, stir. If you need more time add 10-20 seconds at a time. Stirring each time. Be careful not to scorch the chocolate.
Using toothpicks dip each ball into the chocolate using a spoon to help cover completely. Before the chocolate hardens sprinkle the Heath Bars into the balls. If the chocolate gets too hard to dip well reheat in the microwave. If the balls start falling apart put them back in the freezer. Let the balls harden.
Keep truffles in the refrigerator as they have cream cheese and will spoil after 2 hours. Store in an airtight container.
These are very rich and the recipe makes a lot so make sure you have people to share them with.
